È uno dei pochissimi dolci tradizionali della zona di Cassano allo Ionio (Cosenza) (insieme al mostacciolo, diciamo). Sono una specie di macarons di pan di spagna ripieni di crema e ricoperti di glassa. Si acquistano in pasticceria, a vassoi interi con tanti di nastrini colorati. Tradizionalmente le canestrelle vanno servite al pranzo matrimoniale (che un tempo era composto di soli dolci) e anche noi non abbiamo derogato alla regola, servendone interi vassoi al té tra amici e parenti dopo la nostra ‘promessa’… Beh, è pure carino mantenere alcune usanze. :-)

Ottime le canestrelle! E la Calabria è piaciuta moltissimo anche a me, producono della verdura ottima che qui a Roma è quasi introvabile, credo dipenda dal terreno e dal sole.

I am not sure if any one here speaks english, but I am in search of a recipe for this Canestrelle pastry. A dear friend of mine moved to America from Italy and she has been searching for the recipe to make them, and this seems to be the only webpage that I can find a picture of them on.
